After this careful harvest, carried out completely by hand, the olives are brought to a specific mill in which I carry out the processes completely in vacuum that allow me to obtain a high quality product. The town of Reggello, is a town in the province of Florence that extends from the bottom of the Arno valley to the mountainous ridge of Pratomagno. Much of the hilly area of the territory of Reggello is characterized by careful terraced crops with vineyards and olive groves, present since the fourteenth century. The olive tree, a fundamental crop of this area, is a necessary element for the reading of the territory and deeply characterizes its landscape. The land of these places produces an excellent oil renowned for its low acidity and special organoleptic characteristics, due to the height of the olive groves and the peculiarity of the land. It is a unique soil in Tuscany, with very low content of limestone and a high content of quartz. The plants are mostly of the oil mill type, leccino, morellino and in minority of pendolino.
