This is a semi-hard goat cheese made from raw goat’s milk. It is aged for four months with peppercorns, which gives this intense yet delicate flavour or freshly cracked pepper.. Excellent alone or with honey and delicate mustard spreads.

The story of Fattoria Le Caprine was born in 2016 from the love Matteo, Michela and Raffaele had for animals and nature, in a large and ramshackle farm surrounded by the hills of Val d'Elsa, where in the clear days the gaze reaches the towers of San Gimignano, passing through the beautiful medieval village of Certaldo. A real whiff of oxygen for the soul. It is in this fairy-tale place that they decide to breed goats of the Alps Camosciata breed, from which they obtain milk that they transform into cheeses of the highest quality. Their beloved goats regularly go grazing, to feed on fresh grass and give a milk rich in aromas and flavors of the territory. The cheese production takes place in the laboratory created by the company.

Matteo, Michela and Raffaele truly love these incredible animals described as tenacious, strong, combative and tremendously stubborn beings. It is these characteristics that made them madly fall in love with them during their university internship, while studying animal husbandry in Milan.
"Goats are also animals that do not easily adapt to life in a stable, they are a bit anarchic, they need their freedom and for this reason too we decided to be goat breeders." For them, being farmers means, first of all, the well-being and sustainability of the animals which is why their goats eat fresh grass, bask in the sun, get their hair ruffled by the wind, are physically active, living a life worth living, of perfect ruminant animals.
Animal welfare for the children of Le Caprine is not simply an abstract concept with which they can sell their products, but it is the value on which their activity is based on, because only this way they feel worthy and proud to be called goat breeders!
