The pink cecino (pink legume), named for its rose color and an average size, is among the ancient varieties cultivated around Reggello, the Valdarnese side of Pratomagno. Its taste is certainly among the most delicate, the pulp is firm and owes its flavor to the soil of limestone rocks where it is grown. This is why this particular Cece will not present the same unique characteristics, if cultivated in an area different from the surroundings of the Torre del Castellano and a few other farms that have limestone soil. Several years prior the cultivation of pink cecino had ceased, to allow the production of other more productive chickpeas. The renewed farming of the pink cecino is due to Mario Agostinelli and the University of Florence who selected the germplasm.

Twenty years ago the Agostinelli family, with the first lots of seeds given by University of Florence, began the cultivation of this magnificent legume. Today Mario Agostinelli, its main producer, is a reference for genetic experimentation and improvement, as well as the guardian of the germplasm of the Zolfino bean. Mario’s work it’s surprising and him, together with his colleagues, follow all the stages of the production, from the
growth until sorting and packaging. Each step is done strictly by hand, without neglecting any detail. In addition to Fagoilo Zolfino, the company also cultivates the pink chickpea, another ancient and rich legume with excellent organoleptic qualities, as well as a delicious taste!
